It’s essential to use saffron in the right quantities and either brewed or powdered. Using whole saffron threads without grinding them doesn’t add much flavor.

Saffron Chicken Stew: An Easy Saffron Dish

Ingredients:

  • Chicken fillets (cut into small pieces)
  • 1 tablespoon tomato paste
  • Saffron
  • Turmeric
  • Lemon juice
  • Butter
  • Curry spices
  • Salt and pepper

Instructions:

Start by brewing saffron. You can either brew it in advance or mix powdered saffron with hot water. Let it steep for about 5 minutes. Meanwhile, fry the chicken fillets in a pot with oil. Once both sides are golden, add half a cup of water and cover the pot. Let it simmer for 30 minutes.

In a separate pan, sauté the tomato paste, turmeric, curry spices, salt, and pepper. Then, add it to the chicken in the pot. Pour in more water, butter, and lemon juice. Cover the pot again and let the stew cook for 15 minutes.

Serve the saffron chicken stew with fresh lemon slices and rice.

Saffron Carrot Pilaf: A Simple Saffron Dish

Ingredients:

  • Rice
  • Cooked chicken
  • Carrots
  • Barberries
  • Pistachios and almonds (sliced)
  • Butter
  • Saffron
  • Turmeric
  • Lemon juice
  • Sugar
  • Salt and pepper

Instructions:

Start by rinsing and setting aside the rice. Brew saffron by mixing it with hot water. Shred the cooked chicken. Grate the carrots and sauté them in a pan with oil. Once they soften, add barberries, sugar, and lemon juice. Sauté for another minute.

Next, add butter, pistachios, almonds, and the shredded chicken. Mix well.

Now, layer the pilaf. First, place sliced potatoes at the bottom of a pot. Then, layer the rice and the carrot mixture. Continue layering until everything is used up. Pour the saffron mixture over the pilaf.

Turn the heat high to crisp the potatoes. Then, reduce the heat and let the pilaf steam. Serve it with pickles or yogurt.
