It is an easy make-ahead sweet for four small glasses. The custard needs constant stirring, but the assembly itself takes only a few minutes.

Ingredients

  • 240 ml whole milk (1 cup)
  • 1 tablespoon cornstarch
  • 2 tablespoons granulated sugar
  • 1 tablespoon culinary rose water
  • 1 tablespoon strong saffron infusion, cooled
  • 1 tablespoon breakfast or whipping cream, optional
  • 1 packet plain Petit Beurre biscuits, about 100–125 g
  • 1 large firm-ripe banana
  • 3–4 walnut halves, roughly chopped
  • Ground pistachios or a little grated dark chocolate, optional, for serving

The “powder” in the older translated ingredient list is cornstarch: it is what thickens the milk into custard. Do not substitute icing sugar, milk powder or baking powder.

Make the Saffron Custard

  1. Put the cornstarch and sugar in a small saucepan. Whisk in two tablespoons of the cold milk until no dry lumps remain, then slowly whisk in the rest.
  2. Add the rose water and saffron infusion. Set the pan over medium-low heat and stir continuously, reaching into the corners of the pan.
  3. When the mixture begins to steam and thicken, lower the heat. Cook for another minute, still stirring, until it resembles a light pudding and coats the back of a spoon.
  4. Remove the pan from the heat. Stir in the cream, if using. Let the custard cool for 10–15 minutes, stirring occasionally so a skin does not form.

Layer the Dessert

  1. Break the biscuits into bite-size pieces. Keep some texture; they should not become fine crumbs.
  2. Slice the banana just before assembling. Divide a little custard among four glasses, then add biscuit pieces, banana and chopped walnuts.
  3. Repeat the layers, finishing with custard. Cover and refrigerate for at least two hours.
  4. Add pistachio or grated chocolate immediately before serving. This keeps the garnish crisp and the colour fresh.

How to Get Clean, Even Layers

Allow the custard to cool until warm rather than piping hot. Very hot custard can make the banana watery and turn the biscuits soft before the glasses reach the refrigerator. On the other hand, fully chilled custard may be too firm to spread. A warm, spoonable consistency is the useful middle point.

Choose a banana that is yellow and fragrant but still firm. An overripe banana tastes good in baking, yet its slices quickly collapse in a layered dessert. Cut it only when the custard is ready.

Adjusting the Flavour

Rose water brands vary in strength. If yours is highly concentrated, begin with one teaspoon and taste the cooled custard before adding more. Saffron should be fragrant and golden, not medicinal or bitter; one tablespoon of strong infusion is enough for this small batch.

For a less sweet version, keep the two tablespoons of sugar and use an unsweetened plain biscuit. For a richer dessert, include the optional cream. The recipe sets without it, so it can be omitted rather than replaced.

Storage and Serving

Because this dessert contains milk and fresh banana, keep it refrigerated and serve it within 24 hours for the best appearance and texture. It remains safe for longer when properly chilled, but the banana will darken and the biscuit layers will become increasingly soft. Do not freeze the assembled glasses.
