This chicken spinach roll saffron recipe wraps tender chicken breast around a savoury spinach filling and a frankfurter centre. The saffron roll is marinated with lemon, ginger and garlic, then browned and finished gently so the chicken stays moist.

Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons hot saffron infusion
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 200 g cooked spinach, squeezed dry and chopped
  • 2 frankfurter-style sausages
  • 1 small onion, finely chopped
  • 1 to 2 tablespoons neutral cooking oil
  • Salt and red pepper, to taste

You will also need kitchen twine or wooden toothpicks. If you use toothpicks, count them as they go in and remove every one before serving.

Flatten and marinate the chicken

Slice each chicken breast horizontally to open it like a book. Place the pieces between two sheets of baking paper or food-safe film and pound them gently with the flat side of a meat mallet until they are an even 8 to 10 mm thick. Work from the centre outward; heavy blows can tear the meat.

Make the spinach filling

Warm 1 tablespoon of oil in a frying pan over medium heat. Add the onion and cook until soft and lightly golden. Stir in the spinach, season with salt and red pepper, and cook for 2 to 3 minutes.

The filling should be moist but not watery. If liquid gathers in the pan, keep cooking until it evaporates, then spread the mixture on a plate to cool. A hot or wet filling makes the chicken harder to roll.

Shape the chicken rolls

Lay the marinated chicken flat on a clean board and divide the spinach between the pieces, leaving a 2 cm border around the edges. Place one frankfurter across the centre of each piece.

Fold the side edges inward, then roll the chicken firmly around the filling. Tie each roll at intervals with kitchen twine, or close the seam with toothpicks. Keep the seam facing down while you prepare the pan.

Brown and cook through

Heat an ovenproof frying pan, preferably cast iron, over medium heat and add the remaining oil. Lift the rolls from the marinade and let the excess drip away. Brown them on all sides for 6 to 8 minutes in total, turning with tongs rather than piercing the meat.

Transfer the pan to a 190°C (375°F) oven and cook for another 12 to 18 minutes, depending on thickness. If your pan is not ovenproof, move the browned rolls to a small baking dish first.

Check the centre of the thickest roll with a food thermometer. Chicken must reach 74°C (165°F), the current benchmark on the official safe-temperature chart. Measure in the chicken rather than touching the sausage with the probe.

Rest, slice and serve

Rest the rolls for 5 minutes before removing the twine or toothpicks. Slice each one into thick rounds with a sharp knife. The pause gives the filling time to settle and produces cleaner spirals.

Serve the chicken and spinach rolls with rice, roasted vegetables or a crisp salad. Spoon any clear pan juices over the slices, but discard the raw marinade rather than using it as a sauce.

Useful variations

  • Without frankfurters: use a narrow baton of roasted red pepper, or simply add more spinach filling.
  • For a milder roll: replace the red pepper with black pepper.
  • For preparation ahead: shape the rolls, cover and refrigerate for up to one day, then cook them just before serving.
  • Without an oven: after browning, add 2 tablespoons of water, cover the pan and cook over low heat until the chicken reaches the safe endpoint.
