Queen Almond sweets are two-layer Persian almond bars: a tender baked base topped with sliced almonds in a saffron, honey and butter glaze. They are cut while warm, then left to cool into neat squares or rectangles for tea, dessert or an iftar plate.

Ingredients

For the pastry base

  • ½ cup plain flour
  • ⅓ cup powdered sugar
  • 2 tablespoons cream
  • ⅛ teaspoon baking powder
  • ⅓ cup neutral oil
  • 1 large egg

For the almond topping

  • ¼ cup granulated sugar
  • ⅛ cup milk (2 tablespoons)
  • ⅛ teaspoon vanilla
  • ⅓ cup honey
  • 1 cup sliced almonds
  • ⅛ cup butter (2 tablespoons)
  • ¼ tablespoon brewed saffron, about ¾ teaspoon

The inherited ingredient list did not label the two mixtures. The division above follows its instruction to bake a flour dough first and heat “the rest” as a topping, while preserving every original quantity.

Make the pastry base

Heat the oven to 160°C (320°F). Grease a small shallow baking tray and line the base with parchment for easier removal.

Whisk the egg, powdered sugar, oil and cream until smooth. Sift the flour and baking powder together, then fold them into the wet mixture gradually. Stop as soon as no dry flour remains; this soft dough does not need kneading.

Spread it in a thin, even layer across the prepared tray. Bake for 10–12 minutes, until the edges are just beginning to turn golden but the centre is not fully browned.

Cook the saffron almond topping

While the base bakes, combine the sugar, milk, vanilla, honey, sliced almonds, butter and brewed saffron in a saucepan. Warm over low heat, stirring gently so the almonds do not break.

Allow the mixture to bubble once or twice, then remove it from the heat. This is not a caramel: extended boiling can make the topping hard and difficult to cut.

Finish and cut the Queen Almond sweets

  1. Remove the lightly coloured base from the oven and immediately spread the warm almond mixture over it.
  2. Return the tray to the oven and bake until the topping is golden and bubbling evenly, checking after 8–10 minutes.
  3. Let the tray stand only a few minutes, then mark and cut squares or rectangles while the topping is still warm.
  4. Cool completely before lifting the pieces from the tray.

Cutting at the right moment matters. If the bars are moved while very hot they can bend, but if the honey topping cools completely before cutting it may crack.

Serving and storage

The original timings allow about 30 minutes for preparation and roughly 20 minutes in the oven, producing around six dessert servings. Tray size and bar size will change the final count.

Serve the saffron almond sweets in small pieces with tea. Keep them in an airtight container after cooling; use parchment between layers so the honeyed tops do not stick together.

For the cleanest result, keep the base thin, stop mixing once the flour is incorporated and boil the topping only briefly. Those three details preserve the contrast between tender pastry and glossy saffron almonds.
