This recipe for cooking tandoori kebab with Iranian saffron marinates four chicken thighs overnight in yogurt, lemon, spices and saffron before roasting them gently and browning the surface.

It is a Persian saffron variation on tandoori-style chicken, adapted for a home oven rather than a tandoor. Onion and green pepper form a bed under the meat, while a loose foil cover protects the chicken during the hour-long roast.

Score and brine the chicken for 30 minutes
Make a few shallow cuts across the thickest part of each chicken thigh without cutting all the way through. These grooves expose more surface to the marinade.
Dissolve salt in enough cold water to cover the chicken. Add the thighs and refrigerate for 30 minutes. Keep this short brine cold for the entire time, then lift out the chicken and pat it dry. Season the later sauce cautiously because the meat has already absorbed some salt.
Blend the saffron tandoori marinade
Put the 1 cup of yogurt, 2 tablespoons of lemon juice, 4 to 5 green peppers, part of the 2 onions, 2 garlic cloves, paprika, ground coriander seed, black cumin, ginger, black pepper and a measured amount of salt in a food processor. Pulse until the mixture is uniform.
Add the optional 1 teaspoon of curry powder if you enjoy that flavour. If you use very thick strained yogurt, blend in up to 1/4 glass of water so the sauce can coat the chicken. Regular yogurt usually needs no added water.
Stir in brewed saffron a little at a time until the sauce is a warm orange-gold. Red food colouring is optional; saffron supplies the important aroma, so colouring should never replace it.
Marinate overnight in the refrigerator
Place the dried chicken thighs in a non-reactive dish and cover every surface with the marinade, working some into the shallow cuts. Cover the dish and refrigerate overnight.
Do not reuse the raw-chicken marinade as a finishing sauce unless it is boiled separately. Keep the chicken refrigerated until the oven and tray are ready.
Arrange the oven tray
Heat the oven to 170°C (340°F). Lightly oil the inside of an oven tray. Slice the remaining onion and enough green pepper to form a loose bed, then spread them across the tray with a small pinch of salt.
Lift the chicken from the marinade and set the four thighs on top of the onion and pepper. Cover loosely with foil, leaving a little space around an edge for steam to escape. The foil should shield the surface without sealing the tray into a steamer.
Roast for about 1 hour
Place the tray in the preheated oven and roast at 170°C for about 1 hour. The time is a guide; thigh size, bone and oven performance all affect how quickly the centre heats.
Remove the foil and check the thickest part of each thigh with a clean thermometer, avoiding the bone. The CDC food-safety guide gives 165°F (74°C) for poultry. Continue roasting if any thigh has not reached that temperature.
Brown the surface and serve
Once the chicken is safely cooked, brush the surface lightly with oil. Switch the oven to its grill or broil setting and brown the tops briefly, watching constantly so the yogurt and saffron coating does not burn.
Let the tandoori kebab rest for a few minutes. Serve the thighs with the roasted onion and green pepper from the tray, spooning over only the cooked juices.

- Keep the 30-minute salt-water brine and the overnight marinade refrigerated.
