This recipe for Bakhtiari kebab cooking in a pan with Iranian saffron brings veal, chicken, mushrooms and warm spices together without needing skewers or a grill.

Bakhtiari kebab is also searched as Bakhtiyari kebab or kabab Bakhtiari. This is the pan-cooked version: veal strips start first, chicken follows, and saffron seasons the juices that coat both meats.
Bakhtiari kebab ingredients
- Oil for frying: 3 tablespoons
- Onions: 2 medium, chopped
- Veal fillet: 300 grams, cut into strips
- Chicken breast: 300 grams, cut into cubes
- Mushrooms: 100 grams, sliced
- Salt: as needed
- Ground black pepper: as needed
- Spice mixture: 1 teaspoon total, made from cumin, nutmeg and ground coriander seed
- Brewed saffron: 1 teaspoon
- Bell pepper: 1/2 tablespoon, finely chopped
- Extra onion: 1, for serving
- Fresh parsley: chopped, as needed
- Pita or plain bread: for serving
Prepare the meat and vegetables
Cut the chicken breast into even cubes and the veal fillet into strips of similar thickness. Slice the mushrooms, finely chop the 2 cooking onions and prepare the small amount of bell pepper. Keep the extra onion separate for the serving plate.
Pat the chicken and veal dry before they reach the pan. Excess surface moisture makes them steam and can leave too much liquid around the mushrooms.
Soften the onions and start the veal
Heat the 3 tablespoons of oil in a wide frying pan over medium heat. Add the 2 chopped onions and cook until softened and lightly golden.
Add the 300 grams of veal strips in an even layer. Fry over low to medium heat for 4 to 5 minutes, turning the pieces so their surfaces colour. If the pan is small, work in batches rather than piling the meat on top of itself.
Add the chicken and mushrooms
Add the 300 grams of chicken cubes and continue cooking, turning them so each side meets the hot pan. Once the chicken has lost its raw surface colour, add the 100 grams of sliced mushrooms.
Season with salt, black pepper and the 1 teaspoon mixture of cumin, nutmeg and ground coriander seed. Cook until the mushrooms have softened and their released moisture has mostly evaporated.
Finish with Iranian saffron and bell pepper
Pour in the 1 teaspoon of brewed saffron and turn the ingredients through the pan so the colour and aroma are evenly distributed. Continue cooking until the chicken and veal are safely cooked through.
Time alone cannot confirm that mixed pieces are ready. The CDC food-safety guide gives 165°F (74°C) for poultry and 145°F (63°C), followed by a three-minute rest, for whole cuts of veal. Check the thickest chicken cube and veal strip with a clean food thermometer.
Add the 1/2 tablespoon of chopped bell pepper near the end so it stays distinct. Its flavour can dominate the pan, so the original small quantity is deliberate; use slightly less if you prefer.
Serve the pan-cooked Bakhtiari kebab
Transfer the kebab Bakhtiari to a warm serving dish. Slice the reserved onion and add it with chopped parsley. Serve with pita bread, or use any plain bread that can gather the saffron-scented pan juices.
If liquid remains in the pan, remove the cooked meat briefly and reduce the juices over moderate heat. Return the meat only long enough to coat it, which keeps the chicken from drying out.
Details that keep the two meats balanced
- Cut the veal into strips and the chicken into cubes, as in the original method.
- Give the veal its 4-to-5-minute head start before adding the chicken.
- Use a wide pan so the meat browns instead of boiling in released liquid.
- Add mushrooms only after the chicken has started cooking.
- Keep the spice blend to 1 teaspoon so cumin, nutmeg and coriander do not cover the saffron.
- Add the small amount of bell pepper last.
Bakhtiari kebab in a pan with Iranian saffron should finish with distinct pieces of chicken and veal rather than a heavy sauce. Soft onion, browned mushrooms and the measured spice mixture give it depth, while fresh parsley and onion lift the serving plate.
