
Saffron prices fall when available supply grows faster than immediate demand. Harvest timing, inventories held back from market, export orders and confidence in future production can all move the price. Historical reports from Iran show these forces clearly, but their figures come from different market periods and should not be read as a current quotation.
For a buyer, “cheap saffron” is not enough information. A low price may reflect seasonal supply, a large wholesale lot or weaker demand, but it can also come with a different grade, origin, moisture level or product form. The useful comparison is between dated offers for the same specification.
Historical saffron price snapshots
In one archived market report, Gholamreza Miri of Iran’s National Saffron Council said wholesale prices had fallen by about 300,000 tomans per kilogram, leaving a range of roughly 4.35 million to 6 million tomans. He linked the decline to saffron entering the market around harvest while some growers and intermediaries were still holding stock.
A separate report quoted council member Ali Hosseini describing two months of relative stability at approximately 4.4 million to 5.7 million tomans per kilogram. In another pre-harvest snapshot, the quoted price was about 5 million tomans after a decline of roughly 800,000 tomans during the preceding month.
These are historical Iranian wholesale figures in tomans, not US-dollar prices and not today’s retail price. They also refer to different reporting windows. Putting them on one undated chart would create a false trend.
Why harvest season can put pressure on prices
Saffron harvesting in Iran generally begins during October, although the timing varies with the region and weather. One of the archived reports placed the official start around 25 Mehr in the Iranian calendar, roughly mid-October. As newly dried threads reach traders, the volume offered for sale can rise quickly. If purchasing does not rise at the same pace, prices may soften.
The same pre-harvest report expected production to increase by about 10 percent after favourable rainfall and continuing expansion of cultivated land. Another council estimate put that season’s output near 400 tonnes, also about 10 percent higher. Both were forecasts, not final production totals. Heat, pests, rainfall, drying losses and actual field yields could still change the outcome.
Seasonal price movement is not guaranteed. If buyers compete for limited high-grade lots, export demand strengthens or the crop underperforms, prices can move in the other direction. Harvest dates therefore help explain supply, but they do not predict a price by themselves.
Stocks, hoarding and incomplete market information
Several historical comments blamed withheld inventory for price volatility. Miri referred to saffron stored in homes after harvest, while Hosseini claimed that more than 100 tonnes were being held in warehouses in expectation of higher prices. That number was an attributed industry estimate; the archived material did not provide an audited stock register to verify it.
Inventory can affect both the current and following season. Stock released suddenly adds supply; stock carried forward can leave the next harvest with more product to absorb. Reliable production totals, dated inventory data and transparent transaction terms are therefore more useful than rumours about scarcity.
Export demand can rise or fall between reporting periods
The archived reports also demonstrate why export percentages need dates and a clear comparison base. One article said saffron exports had risen 37 percent during the first eight months of its reporting year. Another described a different six-month period in which 52 tonnes and 540 kilograms, valued at US$75.23 million, were exported through Mashhad—a year-on-year decline of 9.5 percent.
That second report said roughly 90 percent of Iran’s saffron exports passed through Mashhad and recorded a particularly weak month: 4 tonnes and 467 kilograms compared with 10 tonnes and 850 kilograms in the same month a year earlier, a decline of about 58 percent. The six-month, eight-month and single-month figures are not contradictory once their periods are kept separate. They show that export demand can change sharply within and between seasons.
For current analysis, use a customs or statistical source that identifies the reporting period, product code, destination, quantity and value. Export value alone does not reveal the grade or contract terms, and shipment volume alone does not reveal the price received by growers.
Why an exchange or a production increase is not a complete solution
Hosseini argued that stable prices make it easier for exporters to sign contracts, but he did not expect the launch of a saffron exchange by itself to increase exports or determine prices. A marketplace can improve price discovery only when its lots, grades, volumes and settlement rules are clear. It cannot create end demand.
He also warned that expanding production without increasing domestic consumption or developing export markets could leave more saffron competing for the same buyers. His concern about saffron-corm smuggling was longer-term: unregulated movement of planting material may affect future production and traceability, but it should not be treated as an explanation for a particular day’s dried-saffron quote.
How to compare a saffron price today
Ask for a current written quotation rather than relying on an old news figure. A meaningful quote should identify:
- the date and currency, including whether the unit is per gram or kilogram;
- retail or wholesale quantity and minimum order;
- threads, cut threads or powder;
- origin, harvest or packing date and lot number;
- the agreed grade and supporting laboratory specification;
- packaging, delivery terms, tax and any freight charge.
The current ISO 3632-1 specification covers dried saffron in filament, cut-filament and powder forms. It provides a common starting point for a specification, but a buyer should still agree which tests, sampling method and acceptance criteria apply to the actual lot. A price is only “cheap” when the product, quantity and terms are genuinely comparable.
