Kerman noodle soup recipe (Ash reshteh) with delicious saffron
Kerman noodle soup is one of the most delicious and original noodle soups among other Iranian noodles. I hope you like this delicious and fragrant noodle soup.
ingredients :
- Orange peel (during the) = the amount needed
- Pistachio slices and almond slices = as needed
- Chiti beans = 1 cup
- Peas = 1 and 1/2 cups
- Lentils = 1 cup
- Onion = 4 pcs
- Turmeric = 1 teaspoon
- Water = 5 glasses
- Vegetables (Ash includes parsley, leeks, coriander, spinach (if it weren’t for the spinach season, a little beet leaf)) = 1 kg
- Garlic (fried) = the amount needed
- String = 1 kg
- kashk= as needed
- Mint (fried) = the amount needed
- Minced meat = 250 grams
- Chickpea flour = 1/2 cup
- Saffron mixed with hot water = 1 tbsp
- Sekanjabin = the amount needed
- Oil = the amount needed
- Salt and pepper = the amount needed
- Cinnamon = the amount needed
Instruction :
First, chop 4 onions in a suitable bowl and fry with good oil. Add the washed beans to the ingredients except the lentils and fry for a few minutes Then add the turmeric and fry a little and let the ingredients cook with 4 to 5 cups of water.
When the beans are cooked, add the chopped vegetables along with the lentils. After cooking the vegetables, add the noodles and let the ashes settle.
Grate 1 onion and grind it with the meat, Mix chickpea flour, cinnamon, salt and pepper, turmeric and Saffron mixed with hot water and knead well.
From this, make small meatballs and fry them in oil. Finally, add some sesame seeds and turn off the heat.
Put the soup in a bowl and garnish with hot garlic, hot mint, finely chopped dumplings, pistachio slices, almond slices, orange slices and curd. In Kerman, this soup is also served with sesame syrup.
Kerman string soup tips:
Be sure to soak the beans from the night before and change the water twice, and if you forget, boil it twice and drain the juice and then cook.
Note that if your lentils are overcooked, add them along with the first beans
