Ingredients:
- Chicken – 2 kg
- Lemon juice – 4 tbsp
- Thick yogurt – 100 g
- Saffron – 2 tsp
- Large onions – 2
- Oil – 10 tbsp
- Butter – 100 g
Preparation:
- Step One: After cleaning and washing the chicken, cut it into appropriate pieces for skewering. For parties, it’s better to use boneless chicken breasts.
- Step Two: Place the cut chicken pieces into a large bowl, then thinly slice the onions and add them on top.
- Step Three: Mix saffron with a piece of ice and allow it to melt. Then, add salt, pepper, yogurt, lemon juice, oil, and saffron to the chicken. Wear gloves and mix everything thoroughly, kneading the ingredients until they are well combined. Keep some saffron aside for later use.
- Step Four: Cover the bowl with plastic wrap and refrigerate it for 3 hours. The longer the chicken marinates, the better the taste.
- Step Five: Once the chicken is marinated, remove it from the fridge, skewer it, ensuring to separate boneless pieces from those with bones for even cooking.

- Hot green chili – 2
- Paprika – 2 tbsp
- Ginger – 1 tbsp
- Saffron – 2 tsp
- Salt – to taste
- Black and red pepper – ½ tsp each
Preparation:
- Step One: Clean and cut the chicken into pieces suitable for skewering.
- Step Two: Mix the saffron with ice as instructed earlier. Slice the hot green chilies and place them over the chicken.
- Step Three: Add all the spices and ingredients onto the chicken and mix them well. Cover the chicken with plastic wrap and refrigerate for 3 hours or longer.
