How to Make Saffron Tahchin
Step 1: Soaking Saffron for the Best Flavor
To begin your saffron tahchin recipe, it is recommended to soak saffron in one or two ice cubes until the ice melts. This method is better than steeping saffron in hot or boiling water, as it preserves its aroma and color.
Step 2: Preparing the Rice for the Saffron Tahchin Recipe
Rinse the rice and soak it in water with two tablespoons of salt for about 3 hours, or until the rice absorbs enough water. If you’re short on time, you can start soaking the rice and proceed with the rest of the tahchin preparation.
In a separate pot, heat water and bring it to a boil. Once the water is boiling, add the rice with one teaspoon of salt. Let it cook for about 20 minutes, then drain it. Keep in mind that cooking times may vary based on the type of rice you use. Check the rice by pressing it between your fingers; if it’s too firm, it’s time to drain. The rice will be cooked further later, so it doesn’t need to be too soft at this stage. This is an essential step in any saffron tahchin recipe to get the right texture.
Step 3: Preparing the Chicken for the Saffron Tahchin
Next, prepare the chicken. Place the chicken, a medium onion, and two garlic cloves in a pot with water to boil. This is an important step to infuse the chicken with flavor for your saffron tahchin recipe.
Step 4: Sautéing the Chicken and Barberries
Once the chicken is cooked and soft, remove it from the pot and shred it to your desired size. You can leave it in larger pieces or shred it finely, depending on your preference. In a pan, sauté the shredded chicken with cinnamon, turmeric, salt, pepper, thyme, and saffron. Sautéing for about 10 minutes is enough. Add the barberries to the pan and sauté them together with the chicken. This step is what gives your saffron tahchin recipe its signature flavor.
Step 5: Combining the Rice, Yogurt, and Saffron
In a large bowl, combine the cooked rice with yogurt, the remaining saffron, rose water, and eggs. Mix them together thoroughly to create the creamy base of your saffron tahchin recipe.
Step 6: Assembling and Cooking the Saffron Tahchin
Make sure you use a pot or pan where you can easily flip the tahchin later. Add some oil to the bottom of the pot and layer the rice mixture. Then, add the chicken and barberries on top of the rice, followed by another layer of rice. Let the pot cook on medium heat for about 40 minutes. Check the bottom of the tahchin to see if it has turned golden brown. Once it has, flip the tahchin and cook the other side until it is fully golden. This flipping method ensures the perfect golden crust for your saffron tahchin recipe.
Your saffron tahchin recipe is now ready to serve. Enjoy!
